    Boning knife and filet knife are not the same. Filet knife has some bend to it, boning knife does not. Good intro, but some elements are wrong.

    This is a good book for very basic culinary tool knowledge, I wish there was more information but considering this is a free book and includes a quiz at the end, I would say this is a perfect entry level lesson for an aspiring chef!

    Great book for the beginner that wants to know about basic knives, equipment and small wares. The book even has quizzes ant the end of the chapters to help review materials.
